The turkey is stuffed with our home-made recipe as listed below. We also provide
you with cooking instructions so you are left with a perfectly cooked turkey, moist and full of flavour. Our turkeys are sourced from Numurkah Free Range Turkeys, Victoria.
1 onion, finely chopped
3 garlic cloves, finely chopped
¼ cup (35gm) unsalted pistachio kernels, chopped
400gm (about 1 loaf) ciabatta, crusts removed, bread torn into very small pieces
100gm veal or pork mince (or a mixture)
1 apple or pear, peeled, grated
1/3 cup of cranberries and chopped apricots
Large pinch each nutmeg and cinnamon
3 pancetta slices, chopped
6 sage leaves, thinly sliced
Splash of vin santo or brandy
