RECIPE: Penny's Ham glaze




1 Otway Ham on the bone
2/3 cup brown sugar
1 cup macadamia nuts, chopped
2 tbsp Mustang Dijon Mustard
120g Buderim Ginger marmalade
200g Mitch's 5 fruit marmalade
2 tbsp Daylesford condiment company Sweet chilli jam

  1. Pre-heat oven to 200 degrees. Line a large roasting tray with baking paper.
  2. Mix all ingredients together except the macadamia nuts.
  3. Carefully remove skin from the ham using a sharp knife then peel back, avoid removing any of the fat layer.
  4. Score with a sharp knife in parallel lines about 1 cm apart or a criss cross pattern.
  5. Brush 1/3 of the glaze over scored ham leg and place in over for 1 hour. Re-brush glaze every 15 mins. and add macadamia nuts over the top for the last 15 mins.
